Roasted Cherry Tomatoes with Goat Cheese and Crusty Bread

I’ve waited all summer long for my tomatoes on the vine to ripen and by morning they’ll be frozen if I don’t pick the rest now. I’m using cherry tomatoes, but you can use any variety for this recipe.
Roasted Tomatoes and Goat Cheese w/Crusty Bread
2 cups cherry tomatoes halved (enough to fill but not overcrowd a sheet pan)
4 garlic cloves chopped
2 tablespoon olive oil
½ teaspoon italian seasoning
S&P
Balsamic Glaze
Cooking spray
Fresh basil
- Preheat the oven to 400 degrees F. Coat sheet pan with cooking spray.
- Place the cherry tomatoes in a single layer on the sheet pan.
- In a small bowl, mix together the olive oil, garlic, Italian seasoning, salt and pepper.
- Drizzle the oil mixture over the tomatoes and toss to coat evenly.
- Bake for 25 minutes.
- Serve with goat cheese,fresh herbs and drizzle with balsamic glaze and your choice of warm bread.
