Roasted Cherry Tomatoes with Goat Cheese and Crusty Bread

I’ve waited all summer long for my tomatoes on the vine to ripen and by morning they’ll be frozen if I don’t pick the rest now. I’m using cherry tomatoes, but you can use any variety for this recipe. 

Roasted Tomatoes and Goat Cheese w/Crusty Bread

2 cups cherry tomatoes halved (enough to fill but not overcrowd a sheet pan)

4 garlic cloves chopped

2 tablespoon olive oil

½ teaspoon italian seasoning

S&P

Balsamic Glaze

Cooking spray

Fresh basil 

 

  1. Preheat the oven to 400 degrees F. Coat sheet pan with cooking spray.
  2. Place the cherry tomatoes in a single layer on the sheet pan.
  3. In a small bowl, mix together the olive oil, garlic, Italian seasoning, salt and pepper.
  4. Drizzle the oil mixture over the tomatoes and toss to coat evenly.
  5. Bake for 25 minutes. 
  6. Serve with goat cheese,fresh herbs and drizzle with balsamic glaze and your choice of warm bread.
