Sloppy Shroomy Joe w/Rosemary Honey Goat Cheese

A local cafe in SLC serves a lamb sloppy joe (too tomatoey  and a shroomy joe which is too sweet,, IMO) so I combined the two dishes into one using ground beef.

Ingredients

Sloppy Joe’s

1 lb ground beef

2 tablespoons olive oil
8-ounce  sliced mushrooms (I used cremini)
1/2 cup yellow onions, diced
2 tablespoons tomato paste
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
1 tablespoon molasses
1 tablespoon rosemary, chopped
dash of Tabasco
salt and pepper to taste
4 buns of your choice (I like to use a deli bun to hold the meat mixture in easier)

For the rosemary goat cheese

4oz plain goat cheese log
1 tablespoon rosemary, chopped
1 teaspoon honey (I prefer hot honey)
salt and pepper to taste

Directions:

Saute mushrooms and onions for 5 minutes, then add rosemary and ground beef and brown.  Drain excess liquid. Add tomato paste, red wine vinegar, Worcestershire and molasses and stir until incorporated. While that’s all coming together, mix the goat cheese with the remaining rosemary, honey and salt and pepper.  Slather goat cheese on one side of bun and fill with meat mixture.
