Butterscotch Blondies w/Flaked Sea Salt

Look, I know sometimes cookies seem like a pain to make. All the measuring and mixing, cookie sheets and waiting for batch after batch to cook. This is a simple way of getting that cookie taste and texture without all the detail. I love using browned butter, not only for it’s nutty taste, but it’s so much easier than the right softened butter texture. Here in Utah, room temperature butter can be nearly melting in July or solid in January. I’m also a BIG fan of flaked sea salt and it pairs perfectly with the sweetness of the butterscotch.
10 tablesppons butter
3/4 light brown sugar packed
1 large egg
2 tsp pure vanilla
1 cup AP flour
1/2 cup quick oats (totally optional if you want to feel healthy, I like the texture)
1/4 tsp salt
2/3 cup butterscotch chips (of course you can use chocolate chips or a combo of both)
Flaked Sea Salt
Preheat oven to 350° and spray an 8 by 8 pan with cooking spray
Add butter to a large saucepan (you’ll mix the rest of the ingredients in here) and swirl around waiting for it to bubble up and foam without burning, turn off heat and let cool 20 minutes.
Add the brown sugar, egg, vanilla, flour, oats, salt and chips and mix making sure to pick up all those browned bits at the bottom of the pan. When ingredients are incorporated but not over mixed, add the prepared baking dish and bake for 20-25 minutes. As soon as they come out of the oven, sprinkle with the flaked sea salt making sure not to over do it.
Cool completly (if you can wait that long) before cutting into squares.
