Ginger Cake

This is one of my favorite holiday desserts that I look forward to making each year. The intoxicating smells of the spices and chewy ginger pieces are my favorite. I prefer to serve this with a Bourbon or Eggnog Whipped Cream, YUM!
Ingredients
1/2 stick of butter (4 tablespoons)
1 cup AP flour + more for the pan
2 tablespoons finely chopped crystalized ginger
3/4 teaspoon ground ginger
3/4 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspon salt
1/8 teaspoon ground cloves
1/4 cup light brown sugar
2 tablespoons granulated sugar
1/3 cup unsulphered molasses
1/2 cup milk (room temperature)
1 large egg
1 tsp orange zest
- Preheat the oven to 350 degrees F. Grease an 8-inch round pan or skillet with butter and lightly coat with flour.
- In a medium bowl, whisk together the flour, crystallized ginger, baking soda, salt, ground ginger, cinnamon and cloves. Set aside.
- In a large bowl, mix together the butter, brown sugar, granulated sugar, molasses and milk. Whisk in the egg and orange zest.
- Add the dry ingredients to the wet ingredients and whisk until just combined and there are no more lumps. Pour the batter into the prepared pan and bake for about 25 to 35 minutes, or until the edges look dark and the middle feels firm to the touch. Set the pan on a rack to cool.
