Goat Cheese with Candied Bacon and Dates

This is a perfect holiday appetizer that is decadent yet easy to put together with a few ingredients.
Ingredients
6-8 slices of bacon, chopped
2 tablespoons rosemary, divided
1 teaspoon brown sugar
1/3 cup + 1 tsp hot honey
8 Medjool dates, pitted
1 10 oz log goat cheese, room temperature
4 oz cream cheese, room temperature
2 tablespoons extra virgin olive oil (more if you want to add a drizzle prior to serving)

Instructions
1. Preheat oven to 400° and line baking sheet with parchment paper.
2. Toss together the bacon, 1 tablespoon rosemary, brown sugar, 1 teaspoon honey and arrange in an even layer. Tear the dates and scatter them around the bacon. Bake 8-10 minutes, until the bacon is crisp.
3. Combine the goat cheese, cream cheese, olive oil, and a pinch of salt in a bowl and mix with a handheld mixer until smooth.
Spoon the goat cheese mixture in a bowl and top with the candied bacon date mixture, 1 tablespoon rosemary and drizzle with honey. Serve with crackers or bread.
Note: I put my cheese mixture in plastic wrap and formed a log for the dish pictured and sprinkled with chopped pistachios and a little extra evoo drizzle on top.
